We buy tomatoes from local farmers which truly define true "sustainability": providing a great product through responsible farming techniques and minimizing the carbon footprint of transporting the tomatoes from local farms to the hotel kitchen. In addition to their great color and flavor, heirloom tomatoes are healthy and are a great source of anti-oxidants and vitamins A and C. Tomatoes are, for many, the ingredient that defines fresh summer produce.
We purchase only those heirloom varieties which are fresh and available so the varietals change on a regular basis subject to the availability of each varietal.
Heirloom Tomato Salad
First a tomato caramel is made by reducing tomato juice from the prepared tomatoes with white sugar to create thick syrup—thus the term “caramel”. Balsamic vinegar, sugar and vanilla bean are gently reduced and then added to agar to create a Balsamic Vinegar Gelée.
Next, we hand craft a Tomato Sorbet, which is prepared using seasoned heirloom tomato pulp combined with a judicious mix of Tabasco, celery seed, and simple syrup, which are blended together then prepared frozen in an ice cream machine. A dollop of the sorbet is carefully placed on the sliced tomatoes, with freshly shaved basil and seasoned with sea salt, pepper and virgin olive oil.
